  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori (seaweed)
  • 8 ounces smoked salmon, sliced
  • 1/2 cucumber, julienned
  • 1 avocado, sliced
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon chives, chopped
  • 1 teaspoon lemon juice
  • Sesame seeds for garnish (optional)

How to Make Smoked Salmon Sushi

  1. Rinse the sushi rice under cold water until the water runs clear. In a pot, combine the rice and water, bringing it to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 20 minutes.
  2. While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until dissolved. Once the rice is done, remove it from heat and let it sit covered for 10 minutes. Then, transfer to a large bowl, and gently fold in the vinegar mixture. Allow it to cool.
  3. Prepare the creamy herb sauce by whisking together the mayonnaise, dill, chives, and lemon juice in a small bowl. Set aside.
  4. Lay a sheet of nori on a bamboo sushi mat, shiny side down. With wet hands, spread about 1/4 of the cooled sushi rice evenly over the nori, leaving a 1-inch border at the top.
  5. On top of the rice, layer slices of smoked salmon, cucumber, and avocado. Drizzle a small amount of the creamy herb sauce over the fillings.
  6. Starting from the bottom, carefully roll the sushi away from you, using the mat to help create a tight roll. Seal the edge of the nori with a little water.
  7. Repeat the process with the remaining ingredients to make three more rolls.
  8. Using a sharp knife, slice each roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean edges.
